Do you think oatmeal is boring? Well, think again! Once you’ve tried it with my apple and cinnamon compote, oatmeal is going to become your new favorite breakfast—I promise. The compote is also excellent served cold with vegan yogurt or as a garnish for crêpes.
Oatmeal:
4½ cups (360 g) rolled oats
8 cups (2 L) plant milk
Pinch of salt
Apple and Cinnamon Compote:
4 apples, cored, peeled, and diced
½ cup (65 g) raisins
10 pitted dates (3½ oz/100 g), chopped
½ teaspoon ground cinnamon or 1 cinnamon stick
¼ to ½ cup (60 to 125 mL) water
Pumpkin seeds, to garnish
For the Oatmeal:
1. In a saucepan, combine the oats, milk, and salt. Bring to a boil, then simmer for 8 to 10 minutes. Set aside.
For the Apple and Cinnamon Compote:
2. In a saucepan, combine all the ingredients.
3. Set over medium-high heat and bring to a boil.
4. Lower the heat and simmer for 20 minutes, stirring frequently. Set aside. The compote will keep in an airtight container in the fridge for up to 5 days.
To Serve:
5. Discard the cinnamon stick, if using. Divide the oatmeal between the serving bowls.
6. Spoon some of the compote over each.
7. Sprinkle with pumpkin seeds and enjoy.
