There isn’t always time for a healthy breakfast. I created these breakfast date cookies for those busy mornings. These cookies will amaze you with their simplicity and rich flavor! They’re also excellent as a snack or as a guilt-free dessert.
2½ cups (310 g) pitted dates
½ cup (125 mL) maple syrup, divided
¼ cup (60 mL) vegetable oil
1½ cups (190 g) all-purpose flour
1 cup (80 g) rolled oats
½ teaspoon ground ginger
½ teaspoon ground cinnamon
½ teaspoon salt
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Soak the dates in boiling water for 10 minutes. Drain.
3. Transfer the dates to a food processor. Add ¼ cup (60 mL) of the maple syrup and the oil and blend until smooth.
4. Add the flour, oats, ginger, cinnamon, and salt and blend until the dry ingredients are fully incorporated.
5. Divide the dough into 10 balls. Set the cookie balls on the prepared sheet.
6. Bake for 12 to 15 minutes, until cooked through.
7. Remove the cookies from the oven and immediately brush them with the remaining maple syrup to glaze them. Let sit for 15 minutes before serving. Cookies will keep in an airtight storage container at room temperature for about 4 days.
